Cajun Corn On The Cob

Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 tablespoons mayonnaise (vegan mayo can be used)
  • ⅓ cup sour cream or Mexican crema
  • 1 ½ teaspoons Cajun spice
  • 1 ½ teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped cilantro
  • ½ cup crumbled feta or cotija cheese
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle or chili powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together the olive oil, half of the Cajun spice, half of the smoked paprika, garlic powder, onion powder, salt, and pepper to create a flavorful oil and spice mixture.
  3. Place each ear of corn on a piece of foil. Brush each ear of corn generously with the oil and spice mixture. Wrap each ear of corn tightly in the foil.
  4. Transfer the corn to the preheated oven and bake for 30 minutes. If you prefer your corn to be softer, remove it from the oven after 30 minutes, brush it with more of the oil and spice mixture, and bake for an additional 20-25 minutes.
  5. While the corn is baking, prepare the mayo sauce. In a medium bowl, mix together the mayonnaise, sour cream, remaining Cajun spice, remaining smoked paprika, lime juice, salt, and pepper to create a creamy and tangy sauce.
  6. Once the corn is cooked, remove it from the oven and let it cool slightly. Brush the corn with any remaining oil and spice mixture (optional), and then generously coat each ear of corn with the mayo sauce.
  7. For a slightly charred flavor, you can transfer the baked corn directly to a lightly greased grill pan and grill it until the desired result is achieved. Be careful not to overcook the corn!
  8. Garnish the Cajun Corn On The Cob with crumbled feta or cotija cheese, chopped cilantro, and a sprinkle of Cajun spice.
  9. Serve the Cajun Corn On The Cob warm and enjoy the burst of flavors with every bite.
