Grandma's Butternuts

Ingredients:

  • 3/4 cup of room temperature butter, plus 1 tablespoon
  • 1/2 cup of powdered sugar
  • 1/4 teaspoon of salt
  • 1 3/4 cups of all-purpose flour
  • 1 package of caramel chips (6 oz.)
  • 1 cup of finely chopped nuts

Rum Glaze:

  • 3 cups of powdered sugar
  • 3 or 4 tablespoons of milk or water
  • 1 teaspoon of rum extract

Topping:

  • 1/2 cup of chopped nuts

Instructions:

  1. Start by creaming together the butter, powdered sugar, and salt until they become light and fluffy.
  2. Mix in the flour until well-combined.
  3. Add the caramel chips and 1 cup of finely chopped nuts. Mix everything together by hand, ensuring the ingredients are evenly distributed.
  4. Shape the dough into small balls, using a few teaspoons at a time. Place the balls about 1 inch apart on an ungreased cookie sheet.
  5. Bake the cookies in a preheated oven at 325°F for 15 to 20 minutes. They should be firm but not brown. Allow them to cool on wire racks.
  6. While the cookies are cooling, prepare the rum glaze. Mix together 3 cups of powdered sugar, rum extract, and milk (or water) until you achieve a smooth consistency.
  7. Once the cookies have cooled, you can dip them into the rum glaze or use a spoon to pour it over them.
  8. Finally, sprinkle the cookies with the remaining chopped nuts and allow the icing to settle.
