Ingredients:

  • 1/2 cup salted butter (1 stick, 8 tbsp) melted in a large mug or microwave-safe bowl
  • 1/2 cup light corn syrup (karo works great)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla
  • If you don’t want to add sea salt as a topping on the caramel, use 1/4 teaspoon of table salt in the mixture. Exclude salt if you wish to add sea salt.

Directions:

  1. Butter an 8×8 baking dish or line it with parchment paper for easy removal.
  2. Melt the butter in a large glass bowl in the microwave. Add all other ingredients (except vanilla) and stir to combine. If you want to add sea salt as a garnish, exclude 1/4 teaspoon of salt and add it later.
  3. Return the mixture to the microwave for 6 minutes and 30 seconds. Note that microwave times may vary. Carefully remove the bowl using heating pads and stir in the vanilla.
  4. Carefully pour the caramel into the prepared baking dish. Let it sit for a bit, then sprinkle with sea salt if you didn’t add it to the mixture. Allow it to cool completely before slicing. For easier slicing, place the dish in the fridge until the caramel is cold. Alternatively, you can use a pizza cutter sprayed with Pam spray to slice the caramel at room temperature.
  5. The caramel does not need to be refrigerated. You can wrap individual pieces in wax paper for storage.
