For some reason, we stopped making the Mississippi Mud Cake in recent years. Perhaps we got caught up in the hype of other chocolate desserts. But after receiving countless requests for the recipe, it’s clear that we made a mistake. This cake is too scrumptious to be forgotten.

The Ingredients

To recreate this delightful cake, gather the following ingredients:

  • 2 sticks of melted butter
  • 2 cups of sugar
  • 1/2 cup of cocoa
  • 4 eggs
  • 1 tsp. of vanilla
  • 1 1/2 cups of all-purpose flour
  • 1 tsp. of baking powder
  • 1/4 tsp. of salt
  • 1 cup of coconut
  • 1 bag of miniature marshmallows

For the Frosting:

  • 1 stick of butter
  • 4 Tbs. of cocoa
  • 6 Tbs. of milk
  • 1 lb. box of powdered sugar
  • 1 tsp. of vanilla
  • 1 cup of chopped nuts (pecans or walnuts)

Let’s Get Baking

  1. Preheat your oven to 350 degrees.
  2. In a bowl, whisk together the melted butter, sugar, cocoa, eggs, and vanilla.
  3. Mix in the flour, baking powder, salt, and coconut.
  4. Pour the batter into a greased 9″x13″ pan and bake for 20-25 minutes.

Once the cake is baked, sprinkle the top with miniature marshmallows and return it to the oven for about 5 minutes.

To make the scrumptious frosting, follow these simple steps:

  1. In a saucepan, combine the butter, cocoa, and milk. Bring it to a boil, stirring constantly to prevent scorching.
