Instructions

To Make the Cake:

  1. Preheat your oven to 350F (180C). Prepare two 8″ round baking pans by lightly greasing them and lining the bottom with parchment paper.
  2. In a large bowl, whisk together all of the dry ingredients. Set aside.
  3. In a separate medium bowl, whisk together all of the wet ingredients.
  4. Pour the wet ingredients into the dry ingredient mixture and mix until just combined. Be careful not to overmix.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool completely before frosting.

To Make the Frosting:

  1. In a mixing bowl, combine the vegan butter, vegetable shortening, powdered sugar, cocoa powder, and vanilla extract.
