On the morning of the wedding, I wanted to ensure that everyone had a satisfying breakfast to fuel them for the big day.   • 3 cups of water
  • 2 cups of white sugar

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Butter a 9×13 inch pan to prepare it.
  2. Roll out the pastry dough on a lightly floured surface into a large rectangle, approximately 24 by 16 inches. Cut the dough into six square pieces.
  3. Take one apple and place it on a pastry square with the cored opening facing upwards. Cut your Kerrygold butter into eight pieces. Put one piece of butter in the opening of each apple, and save the remaining butter for the sauce.
  4. Divide the brown sugar between the six apples, putting some inside each cored opening and the rest around the base of each apple. Sprinkle the cinnamon and nutmeg over the apples.
  5. With slightly wet fingertips, bring one corner of the pastry square up to the top of the apple, and then bring the opposite corner to the top. Press them together gently. Repeat this step with the remaining corners, and make sure to seal the dumplings completely by slightly pinching the dough at the sides.
  6. Take the prepared apple dumplings and place them in the buttered baking dish.
  7. In a saucepan, combine the water, white sugar, vanilla extract, and the reserved butter. Place the saucepan over medium heat and bring it to a boil. Let it boil for about five minutes or until the sugar is dissolved. Take this sweet sauce and carefully pour it over the dumplings.
  8. Bake the apple dumplings in the preheated oven for about 50 to 60 minutes until they become golden brown and delicious.
  9. Serve each apple dumpling in a dessert bowl and generously spoon some of the tasty sauce over the top.
