  • 1 pack taco seasoning mix
  • 2 cups shredded cheddar cheese

  • 1 cup prepared rice (Minute Rice works great)
  • 1 can Mexican blend corn (DRAINED, will only use about 1/2 can)
  • 4-5 large flour tortillas
  • 8 oz of thick chunky salsa (your choice, mild or hot)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
  3. Stir in the taco seasoning mix and cook for an additional 2-3 minutes, allowing the flavors to meld together.
  4. In a separate bowl, combine the refried beans and prepared rice. Mix well.
  5. In a 9×13-inch baking dish, spread a thin layer of the beef mixture on the bottom.
  6. Layer 2-3 flour tortillas on top of the beef mixture, making sure to cover the entire surface.
  7. Spread half of the refried bean and rice mixture on top of the tortillas.
  8. Sprinkle half of the drained Mexican blend corn on top of the bean and rice mixture.
  9. Repeat steps 6-8, creating another layer of tortillas, beans and rice, and corn.
  10. Finally, spread a layer of thick chunky salsa on top of the corn.
  11. Sprinkle the shredded cheddar cheese evenly over the salsa.
  12. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  13. After 25 minutes, remove the foil and bake for an additional 10 minutes, allowing the cheese to melt and bubble.
  14. Let the casserole cool for a few minutes before serving.
