Soup with Tortellini, Sausage, and Kale

That time of year has arrived far too soon – the time when I’ve had a cold for two weeks and all I want to eat is soup. Speaking of which, I’m in desperate need of some breakfast soups. Is that a thing? They ought to be.

This soup is similar to some of the other tortellini soups I’ve cooked, such as this Spinach Tomato and Garlic Tortellini Soup and this Tuscan Tortellini Soup, except it contains a lot more meat. And my hubby is not unhappy!

This soup is simple to make and one you’ll want to make again and again. What could possibly go wrong with tortellini? Tortellini is my absolute favorite food, and it creates some of the tastiest soups!

If you have fresh Italian herbs on hand, such as basil, thyme, marjoram, oregano, or rosemary, you can substitute some of those for some of the Italian blend to add additional fresh flavor. But because it’s fall, I went with dried herbs because that’s probably what most of you have on hand right now.

And rather than specifying 5 or 6 different herbs to add to the soup, using the Italian herb mix worked great for this soup.

This hearty soup was exactly what I needed today, and I can’t wait to make it again! I hope you appreciate it as much as I do!
