1 cup (250 g) natural peanut butter, no sugar or oil added
A 1/2 cup (100g) sugar substitute, such as erythritol or stevia
One large egg
1 tsp. vanilla extract
half a teaspoon baking soda
a quarter teaspoon of salt
Making My Favorite Peanut Butter Cookies
Prepare and preheat the oven Preheat the oven to 350°F (175°C). Cover a baking sheet with parchment paper.
Mix together the wet ingredients. In a mixing bowl, add natural peanut butter, sugar substitute, a large egg, and vanilla essence. Mix until the mixture is smooth and all of the ingredients are well incorporated.
Mix up the dry ingredients. To the liquid mixture, add salt and baking soda. Stirring is required to fully mix the dry ingredients into the dough.

Make the cookies. Roll the dough into small balls, about 1 tablespoon each. Place the cookie dough balls on the prepared baking sheet, spacing them apart.
Create cookie traces. Each cookie dough ball should be lightly pushed with a fork to create a crisscross pattern on top. This also gently flattens the cookies.
The Ideal Bake Bake the cookies in a preheated oven for 10 to 12 minutes, or until the edges are just beginning to brown. Remember that they will continue to solidify as they cool.

Have a good time! Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to finish cooling. The cookies will become a little more stable as they cool.
