Ingredients: – 4 cups all-purpose flour – 2 tablespoons sugar – 1 teaspoon salt – 2 teaspoons instant yeast – 12 cup hot water

Instructions:

  1. Combine the flour, sugar, salt, and yeast in a large mixing basin.
  2. Add the lukewarm water gradually to the dry ingredients, kneading thoroughly until a soft dough forms.
  3. Knead the dough for 5-7 minutes on a lightly floured surface, until it is smooth and elastic.
  4. Return the dough to the mixing bowl, cover with a clean towel, and let aside for about 1 hour, or until it has doubled in size.
  5. Once the dough has risen, carefully punch it down to remove any air bubbles before dividing it into small sections and shaping it into balls.
  6. In a large saucepan or frying pan, heat the vegetable oil over medium heat. Check that there is enough oil to completely submerge the amagwinya.
  7. Carefully drop the dough balls into the hot oil and cook until golden brown on one side (approximately 2-3 minutes), then flip them over and fry until golden brown on the other side.
  8. Remove the cooked amagwinya from the oil with a slotted spoon and drain on paper towels to remove excess oil.
