You’re going to think I’m a weirdo when I say this, but breakfast…breakfast makes me excited, you guys! It’s so backwards because I despise getting up in the morning and rarely prepare a big breakfast, yet I still enjoy it. I particularly enjoy it when I offer it at dinner! Fortunately for me, my daughters and husband enjoy it as well.

The girls are always asking for eggs, pancakes, and waffles. I suppose I’d want to serve it for dinner because it makes me feel bold and on the edge. Yes, that’s about as adventurous as I get in my life!

2 box Simply Potatoes® Mashed Potatoes, cooked according per package directions
3 chopped garlic cloves 1/4 teaspoon pepper 1/2 teaspoon salt 1 16 oz package bacon, prepared and crumbled, divided 1 1/2 cups shredded strong cheddar cheese divided 6 eggs
INSTRUCTIONS
Preheat the oven to 350°F.
Combine potatoes, garlic, pepper, salt, 1 cup cheese, and half of the crumbled bacon in a large mixing basin. Mix until well blended.
Spray a 2-quart casserole dish with nonstick cooking spray. Spread the mashed potato mixture on the bottom of the pan.
Then, in the mashed potatoes, form 6 wells for the eggs. Fill the wells with cracked eggs.
Top the potatoes with the remaining bacon and cheese.
Bake for 15-20 minutes, or until the egg whites are just set but the yolks are still somewhat runny. If you like your eggs more done, bake them for a little longer.
Serve immediately garnished with green onions.
