This is a very simple and straightforward dinner. It takes less than 10 minutes to prepare everything and 40 minutes in the oven. When I initially attempted this, I used a really bad hot sausage. I ordered it expecting it to be mild, but holy hell, this was the spiciest sausage I’ve ever had.

This is a fantastic oven-baked supper that will have your family asking for seconds. I promise. It is, however, healthier because it is baked rather than fried. There is cheese, however, and when is that ever a bad thing?
But then I realized I didn’t have enough foil, so it went into the oven! Smoked sausage in all of its smoky, salty, savory glory, creamy baby yellow potatoes (with a few pink ones tossed in for good measure), and, of course, sweet onion; and this Smoked Sausage and Potato Sheet Pan Dinner was born!

Smoked Sausage and Oven Roasted Potatoes

Ingredients:
1 smoked sausage packet, sliced into rounds
1 big peeled and sliced onion
5 big peeled and diced potatoes (12 inch cubes)
excellent sea salt olive oil
ground black pepper, freshly ground
paprika dulce (sweet paprika)
thyme, dried
a handful of aged sharp cheddar cheese

Directions:
Preheat the oven to 400 degrees Fahrenheit.
Spray several sheets of foil with cooking spray and line a big baking tray with sides. Place aside.
In a large mixing dish, combine the sausage rounds, onions, and potatoes. Drizzle with olive oil and season with salt, pepper, paprika, and dried thyme to taste. Toss everything together with your hands until it’s equally spread. Pour this onto the baking sheet and spread it out as much as possible.
Place the potatoes in a preheated oven and bake for 45 minutes to an hour, tossing every 15 minutes or so, until golden brown and soft. Turn the oven off.
Sprinkle the cheese over the cooked meat and potatoes and return to the oven for a few minutes to melt the cheese.
