GARLIC ROASTING MUSHROOMS are a quick and attractive side dish that is a regular in our family when we serve steak. They roast in the oven like your favorite vegetables and are ready to serve after a quick toss in some butter.

This year, we served these Garlic Butter Mushrooms with the Perfect Prime Rib, Perfect Potato Latkes, and Rainbow Roasted Vegetables, my kids’ favorite dish to help me create. Because the Garlic Butter Mushrooms and Rainbow Vegetables were roasting in the oven alongside the Prime Rib, the menu was simple. Then all I had to do was give my whole attention to my latkes, and my Christmas supper was complete.

3 tbsp olive or coconut oil 16 even-sized open cup mushrooms, stalks cut level
1/4 cup softened unsalted butter 3 cloves garlic, finely chopped
2 tbsp chopped fresh thyme

2 pound mushrooms are used in this recipe.
1 tbsp olive oil 3 tbsp balsamic vinegar
2 tbsp. soy sauce (or tamari)
3 garlic cloves, diced 1/2 teaspoon thyme, salt and pepper to taste
Directions
Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt, and pepper, then spread in a single layer on a baking sheet and bake in a preheated 400F/200C oven for 20 minutes, stirring halfway through.
