While they could also be called Grandma’s Candy Bowl Cookies, it’s easy to see why they’re called church window cookies; those adorable mini marshmallows give the desired effect of stained glass windows…(and they make the cookies surprisingly light and airy).

So, what else are they made of? Using chocolate as the base and binder that holds everything together, and mini marshmallows for the dramatic look, flavor, and texture of the recipe, we also added walnuts and coconut for a crispy, crunchy element, as well as vanilla extract and sea salt for a little more depth of flavor.

INGREDIENTS
1 bag (12 oz.) semisweet chocolate chips
1 bag multicolored micro marshmallows (10 oz.)
1 cup finely chopped walnuts
1 1/2 cups coconut shredded
1/2 cup (1 stick) diced unsalted butter
1 teaspoon optional vanilla extract
Optional 1/4 teaspoon sea salt
PREPARATION
Melt butter and chocolate chips in a large microwaveable bowl in 20-second increments, stirring in between, until totally melted and smooth.
Set aside and cool somewhat after stirring in the walnuts and vanilla or sea salt, if using.
scatter out two large sheets of plastic wrap (one on top of the other) and liberally scatter shredded coconut on both pieces, leaving a border around the borders of the plastic wrap.
When the chocolate has cooled slightly but is still warm and malleable, fold in the small marshmallows until well absorbed.
Transfer 1/2 of the chocolate marshmallow mixture to each sheet of plastic wrap, and use the edges of the plastic wrap to make two 1 1/2-2 inch logs. Refrigerate the cookie “dough” for at least 1 hour, or until set.
Remove the log from the refrigerator, slice it into cookies, and enjoy!
