Zucchini rolls are a quick and delightful meal that is perfect for the summer. They will conquer young and old for their irresistible goodness, whether served as a delectable appetizer, to open a memorable dinner, or as a light second course to be completed with a few slices of fresh bread.

For an impeccable result, the courgettes must be cut into very thin slices using a mandolin; once dipped in extra virgin olive oil, seasoned with a pinch of salt and pepper, and then dipped in a rich breading made of breadcrumbs, parmesan, and chopped parsley, they are simply stuffed with provola and cooked ham, then rolled up very tightly to form a roll.

The resulting rolls are placed side by side on a baking dish to keep their shape, and then baked in the oven for a final result that is stringy in the center and crunchy and golden on the outside. Exceptional when served hot from the oven, they are equally delicious warm or at room temperature: the rest, in fact, will let the flavors to combine even more.

As with any other roll recipe, whether meat, fish, or vegetable, you can modify the filling to suit your tastes or the availability of ingredients: you can add other cold cuts and cheeses, a creamy element, such as a fresh spreadable cheese, and for a vegetarian variant, you can omit the cooked ham.

How to Cook Zucchini Rolls

Step 1

Wash the courgettes, peel them, and slice them thinly with a mandolin1.

Step 2

Pour the extra virgin olive oil into a bowl and season with salt and pepper; in a separate bowl, combine the breadcrumbs with the chopped parsley and grated Parmesan. Dip the zucchini slices in the flavored oil first, then in the breadcrumbs, making sure they are completely adhered2.

Stuff the breaded zucchini slices with cooked ham strips3.

Add some provola4 strips.

Roll the filled slices up5.

In a baking dish oiled with a drizzle of oil6, arrange the rolls vertically, closely packed close together so they don’t lose their shape during cooking.
