Anywho…Cooking was undoubtedly in my future because I was surrounded by so many women who believed in cooking for family, friends, church gatherings, and the community. Yes, I meant neighborhood, because if I didn’t have anything to eat, I knew just where to go to receive a hot plate created with love.
The possibilities for this fundamental recipe are limitless. Use a pecan shortbread or pretzel crust, or butterscotch, pistachio, or banana pudding. See the many options listed below the recipe.
1 cup all-purpose flour
1 cup pecans, chopped
12 cup softened margarine
1 (8 oz.) softened cream cheese
1 cup granulated sugar
1 1⁄2 cups The cool whip
2 packages (4 ounces) quick chocolate pudding mix
3 quarts milk
*Mix together the flour, chopped pecans, and margarine. Bake for 20 minutes at 350 degrees F in a baking dish.
*Combine cream cheese, confectioners’ sugar, and cool whip in a mixing bowl. Set aside. Spread mixture on cooled crust.
*Combine quick pudding and milk. Place this on top of the cream cheese mixture. Top with cool whip (to taste) and a few chopped pecans.
