Step 1 First, in a medium mixing bowl or shallow dish, whisk together the flour, salt, pepper, and Cajun seasoning. Alternatively, you can use Cajun seasoning alone for extra taste.
Step 2 Then in a separate basin or plate, thoroughly whisk the eggs until fully combined. In a third mixing bowl, put a layer of panko bread crumbs across the bottom.
Step 3 To prepare the shrimp, coat both sides of each shrimp in the flour mixture, ensuring they are evenly coated, and then shake off any excess flour.
Step 4 Next, dip the coated shrimp into the egg mixture, making sure they are well covered.
Step 5 To complete the coating procedure, grab each shrimp and press the panko breadcrumbs over both sides, providing a uniform and thorough coating.
Step 6 Flip the shrimp and repeat the process, pressing the breadcrumbs firmly onto either side.
Step 7 In a large saucepan over medium heat, heat the frying oil until it reaches 350°F (175°C).
Step 8 Fry the shrimp in small batches for 1 minute, or until completely opaque, being careful not to stack the shrimp during cooking.
Step 9 Carefully remove each shrimp from the oil with kitchen tongs and place them one at a time on a cooling rack positioned over a plate lined with paper towels.
Step 10 Repeat with the remaining shrimp, following the same manner.
