  • 2 tbsp brown sugar
  • 2 tbsp cornflour
  • 1 cup chicken broth

Chicken:

  • 2 lb chicken thigh, cut into 1-inch cubes
  • 2 cloves garlic, finely chopped
  • 2 tsp ginger, finely chopped
  • 1 cup cornflour
  • 2 cups vegetable oil
  • 1 tbsp sesame seeds
  • 4 green onions, thinly sliced

Instructions

Step 1: Marinate the Chicken

  • In a bowl, combine the soy sauce, oyster sauce, rice wine vinegar, sesame oil, and chili flakes to make the marinade. Set it aside.
  • Place the chicken thigh, garlic, ginger, and two tablespoons of the marinade into a zip-lock bag.

Step 2: Coat the Chicken and Prepare the Sauce

  • Mix the chicken in the marinade until it’s well coated, then refrigerate for at least 30 minutes.
  • In the remaining marinade, add brown sugar, cornflour, and chicken broth. Set the sauce aside.

Step 3: Coat the Chicken in Cornflour

  • Remove the chicken from the ziplock bag and place it in a bowl with one cup of cornflour.
  • Toss the chicken in the cornflour until all sides are coated.

Step 4: Fry the Chicken

  • Heat the vegetable oil in a saucepan over medium heat until it reaches 375F.
  • Shake off any excess cornflour from the chicken pieces and carefully place them into the hot oil.
  • Fry the chicken in batches until it turns crispy and golden brown, approximately 3 minutes. Then, transfer them to a plate lined with kitchen paper.

Step 5: Prepare the Sauce

  • While the chicken is frying, place a sauté pan over medium heat and pour in the sauce.
  • Bring the sauce to a simmer and cook for 5 minutes until it thickens and becomes glossy.
