Taco Casserole Recipe

Ingredients:

  • 2 pounds ground beef
  • 1 (1 oz.) packet taco seasoning
  • 4 eggs
  • 3/4 cup whole milk
  • 1 3/4 cups biscuit mix or bisquick
  • 1/2 cup sour cream
  • 2 cups lettuce, chopped or shredded
  • 1 cup tomato, finely chopped
  • 2 cups sharp cheddar cheese, grated
  • Black olives, sliced (optional)
  • Kosher salt and freshly ground pepper, to taste

Preparation:

  1. Preheat your oven to 400º F and lightly grease a 9×13-inch baking dish with non-stick spray.
  2. In a large bowl, beat eggs and milk together until well combined. Stir in biscuit mix, salt, and pepper (if desired). Set aside.
  3. Season the ground beef with salt and pepper, then cook it until browned. Drain the fat, then stir in the taco seasoning.
  4. Place the cooked beef in an even layer in the greased baking dish. Spread the biscuit mix on top of the beef, creating an even layer.
  5. Transfer the baking dish to the oven and bake for 22-25 minutes, or until the biscuit layer is golden brown.
  6. Remove from the oven and let it cool for 10 minutes. Spread sour cream on top of the biscuits.
