Dorie Greenspan’s World Peace Cookies

Makes 36 cookies Preparation time: 25 minutes (active), 3 hours (inactive)

Ingredients
  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 11 tablespoons unsalted butter, at room temperature
  • 2/3 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 3/4 cup semi-sweet mini chocolate chips
Preparation
  1. When you’re ready to bake, preheat your oven to 325°F and line two baking sheets with parchment paper.
  2. In a small bowl, sift together the flour, cocoa powder, and baking soda. Set aside.
  3. In a large bowl, beat the butter on medium speed with an electric mixer until smooth and creamy.
  4. Add the brown sugar, granulated sugar, salt, and vanilla extract. Beat for an additional 2 minutes until well combined.
  5. Add half of the flour mixture to the butter mixture and mix on low speed until just combined. Then, add the remaining flour mixture and mix until everything is well combined.
  6. Stir in the mini chocolate chips until evenly distributed throughout the dough.
  7. Turn the dough out onto a countertop or work surface, and divide it in half. Shape each half into logs that are approximately 1 1/2 inches in diameter.
  8. Wrap each log tightly in plastic wrap and chill in the refrigerator until firm, for at least 3 hours.
  9. Once the dough has chilled and firmed up, slice the logs into 1/2-inch thick rounds.
  10. Place the rounds onto the prepared baking sheets, spacing them about 1 inch apart.
  11. Bake the cookies in the preheated oven for about 12 minutes, or until the edges are firm but the centers are still soft.
  12. Allow the cookies to cool for 5 minutes on the baking sheets before transferring them to a wire rack to cool completely.
