It’s something about the atmosphere and the addictively wonderful food that draws us in every time, so it’s always a pleasure to visit. However, as much as we would like to go there all the time and buy everything on the menu, it would rapidly become prohibitively expensive, so we decided to figure out a method to replicate one of our favorite P.F. Chang’s meals at home. Not only does it taste AMAZING, but we created it for a fraction of the price of the original meal, and we now know precisely what we’ll be making at least once a week from now on; it’s simply that wonderful!
So, what traditional cuisine did we prepare? Of course, the chicken lettuce wraps! The perfectly seasoned chicken – those crunchy water chestnuts are a game changer! – and the refreshing butter lettuce cups (which are the perfect vehicle for getting all that flavor into your mouth) combine to make such a delicious dish, and it’s even better to learn that it’s actually super easy to make at home! Begin with some ground chicken and other ingredients from the international section of your grocery store, and you’re ready to cook. After a brief sauté to get everything cooked and the flavors melded, you’re ready to start scooping your chicken into lettuce wraps. Easy-peasy!

Lettuce Wraps Inspired by P.F. Chang’s

INGREDIENTS
1 pound of ground chicken 1 tbsp olive oil
1 finely diced yellow onion
3 minced garlic cloves
1 (8-ounce) can water drained and coarsely diced chestnuts
1 tablespoon hoisin sauce
1/4 cup soy sauce (low sodium)
1 tablespoon vinegar (rice wine)
Optional: 1 tablespoon Sriracha spicy sauce
1 tablespoon grated fresh ginger
Optional 1/4 teaspoon red pepper flakes
To taste, kosher salt and freshly ground pepper
2 tablespoons finely sliced green onions, plus more for garnish
1 butter lettuce head, washed and spun dry

PREPARATION
In a large pan or skillet, heat the oil over medium-high heat and brown the chicken on both sides. 5 to 7 minutes.
Drain the grease, then add the onions and simmer until they are transparent. Approximately 4-5 minutes. Season with salt and pepper to taste, then add the garlic and ginger and simmer for 1 minute, or until fragrant.
Stir in hoisin sauce, soy sauce, rice wine vinegar, sriracha and red pepper flakes, if using, and cook for another 2-3 minutes, giving flavors a chance to blend.
Stir in the diced water chestnuts and green onions, then taste and adjust the spice as needed.
Serve with butter lettuce and ladle the chicken mixture into lettuce “bowls.” Enjoy!
