  • 6 cups sugar, divided
  • 2 cups heavy cream
  • ½ cup unsalted butter
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 ½ cups chopped walnuts or pecans

Preparation

  1. Grease a 9×13 baking dish and set aside.
  2. In a small saucepan, melt 2 cups of sugar over low heat, stirring often. This process takes about 20 minutes.
  3. Meanwhile, in a large saucepan, combine the remaining 4 cups of sugar and heavy cream. Heat gently until the sugar in the small saucepan has melted, then add it to the large saucepan while continuously stirring.
  4. Increase the heat to medium and cook the mixture until it reaches 244 degrees F or the softball stage.
  5. Remove from heat and stir in the baking soda until well combined.

  7. Let the mixture rest for 20 minutes.
  8. After resting, stir in the chopped nuts until the sheen disappears. Transfer the mixture to the prepared baking dish.
  9. Allow the candy to cool for 1-2 hours, or overnight. Once cooled, cut into small squares and serve.
