RECIPE FOR SAUSAGE, PEPPERS, ONIONS, AND POTATOES

The crunch of bright bell peppers and onions complements the smoky, salty flavor of smoked sausage or Kielbasa. Potato cubes provide starch to round out the dish and help fill us up. This is one of those meals that I enjoy preparing and serving to my family.

Preheat the oven to 475 degrees F. (I used the convection setting on my oven, although if you don’t have that option, it will still work.). Put a big rimmed baking sheet in the oven at the same time, so it can heat up while you prepare the rest of the ingredients.
Scrub the potatoes thoroughly and cut them into 1 to 112 inch pieces. Fill a medium pot halfway with water, leaving just enough space for the potatoes to float. Bring to a boil, then reduce to a low heat and cook for about 5 minutes, covered, until the potatoes are halfway done. The potatoes should be drained.
Meanwhile, if the mushrooms are huge, chop them in half or quarters. Make thick half rings out of the onions. Slice the bell pepper into 1-inch chunks, and the sausage into 1-inch slices.
Combine the onion, bell pepper, mushrooms, olive oil, minced garlic cloves, fresh thyme salt, freshly ground black pepper, and a combination of dried herbs in a large mixing dish.
When the potatoes are halfway done, combine them gently with the mushroom and pepper combination and sausage.
Remove the baking sheet from the oven and rapidly spread everything out in a single layer.
Cook, uncovered, for 20-30 minutes, or until the veggies are all cooked through and golden brown, turning everything over halfway through. Broil the dish for a few minutes at the end of cooking to add extra brownness and a slight sear.
Garnish with fresh herbs like parsley, thyme, chives, dill, and others.
Prepare Ahead of Time: Prepare all of the ingredients but do not place them on the baking sheet. Keep in the refrigerator for up to 2 days. When you’re ready to serve, preheat the oven with the rimmed baking sheet inside and then finish the recipe.
