Creamed peas with new potatoes is a classic Southern dish that brings back nostalgic memories for many of us. Ingredients:

  • 1 lb. small new potatoes, peeled and quartered (or halved if very small)
  • 1/2 tsp. salt
  • 4 cups fresh shelled green peas (or 2 (10 oz.) bags frozen peas or 2 (15 oz.) cans green peas, drained)
  • 3 Tbs. butter
  • 3 Tbs. flour
  • 1/2 tsp. salt
  • Dash of pepper
  • 2 cups half and half cream (you can also use whole milk)
  • Fresh dill for garnish
  • Optional Ingredient: 1 cup diced Velveeta cheese

Instructions:

  1. In a saucepan, place the potatoes with enough water to cover them. Add some salt to the water. Bring it to a boil and then simmer for about 5 minutes. Add the peas and continue simmering for an additional 15-20 minutes. Fresh peas won’t take long to cook, but if you’re using frozen or canned peas, just cook them for about 5 minutes. Make sure the potatoes are tender. Drain most of the water when they are done.
  1. In a microwave-proof bowl, melt the butter. Add flour, salt, and pepper, and whisk until smooth. Microwave the mixture for about 30 seconds. Then, whisk in the half and half cream and microwave for around 3 minutes. These times may vary depending on the wattage of your microwave. Keep whisking until the sauce thickens and becomes smooth. If you prefer cooking on the stovetop, make sure to stir constantly to prevent sticking.
  2. If you want to make the dish cheesy, add the cubed Velveeta cheese to the white sauce and microwave for another minute. Whisk until the cheese is melted and the sauce is smooth.
  3. Pour the sauce over the peas and potatoes, and toss gently to coat them. You can garnish the dish with a sprinkle of fresh dill. These creamy peas and new potatoes taste amazing when served alongside salmon patties.
