  • 2 onions, diced

  • 4 teaspoons chopped thyme, divided
  • 1/2 cup Marsala wine (any dry red or white wine)
  • 6 tablespoons all-purpose flour
  • 4 cups low-sodium chicken stock or broth
  • 1 to 2 teaspoons of salt, adjust to taste
  • 1/2-1 teaspoon cracked black pepper, adjust to taste
  • 2 beef stock cubes, crumbled
  • 1 cup heavy cream or half-and-half (with evaporated milk)
  • Chopped fresh parsley and thyme to serve

Instructions

  1. Heat butter and oil in a large saucepan over medium-high heat until melted. Saute the onion for 2 to 3 minutes until softened. Cook garlic until fragrant, about 1 minute.
  2. Add the mushrooms and 2 teaspoons of thyme, cook for 5 minutes. Pour in the wine and cook for 3 minutes.
  3. Sprinkle the mushrooms with flour, mix well and cook for 2 minutes. Add the broth, mix again and bring to the boil. Reduce heat to medium-low, season with salt, pepper, and crumbled stock cubes.
  4. Cover and simmer for 10 to 15 minutes, stirring occasionally, until thickened.
  5. Reduce heat to low, stir in cream or half-and-half. Allow to simmer gently (do not boil). Adjust salt and pepper to taste.
  6. Stir in the parsley and remaining thyme. Serve hot.
