Maraschino Cherry Shortbread Cookies – Make these classic shortbread cookies with red chunks of Maraschino cherries for a lovely Christmas dessert. These festive Christmas cookies are the easiest dish to make and a delicious way to celebrate with your family!

1 cup unsalted butter, at room temperature
1 pound powdered sugar
a half-teaspoon vanilla extract
2 cups regular flour
1 teaspoon of salt
3/4 cup chopped maraschino cherries (spread cherries on a paper towel to drain well or use candied maraschino cherries)
a third of a cup chocolate chips

Instructions
Set aside the flour and salt.
1 cup unsalted softened butter and 1/2 cup powdered sugar creamed together; add vanilla.
Mix in the flour and salt mixture until larger clumps form.
Incorporate chocolate chips and maraschino cherries.
Form the dough into a log and press it firmly to prevent it from crumbling when you slice the cookies (the log should be about 2 inches thick). Wrap it in plastic wrap and place it in the refrigerator for at least 1-2 hours.
Preheat the oven to 325 degrees Fahrenheit and prepare a baking sheet with parchment paper.
Cut the log into 1/4 or 1/3 inch thick slices (if the slices crumble, push them back together with your hands) and lay them one inch apart on a baking sheet.
Bake the cookies for 10- 15 minutes (or until the tops begin to become softly golden brown).
Allow them to cool for 5 minutes on the baking sheet before transferring to a cooling rack to cool completely.
