Here’s how to make Adobo, a popular Filipino dish:

  • 2 pounds (900 grams) chicken chunks (you may also use pork or a combination of the two)
  • half a cup soy sauce
  • 1/2 cup vinegar (cane vinegar preferred)
  • 4 minced garlic cloves
  • 1 medium-sized sliced onion
  • 1 teaspoon black peppercorns, whole
2 bay leaves, 1 tablespoon frying oil, 1 cup water, and salt to taste

Instructions:

  1. Combine the soy sauce, vinegar, minced garlic, and black peppercorns in a large mixing bowl. Combine thoroughly.
  2. Submerge the chicken pieces in the marinade for at least 30 minutes. If you have time, marinate the chicken in the refrigerator for a few hours or overnight to increase the flavor.
  3. In a big pan or saucepan, heat the cooking oil over medium heat. Remove the chicken from the marinade and set aside the marinade.
  4. Cook the chicken pieces in the hot oil until they are golden brown on all sides. This procedure aids in the development of a richer flavor.
  5. Once the chicken has been cooked, add the cut onions to the skillet and cook until transparent.
  6. Add the bay leaves and the leftover marinade. Combine everything in a mixing bowl.
  7. Pour in the water and bring to a boil. Reduce the heat to low, cover the pan, and cook for 30-45 minutes, or until the chicken is cooked. Stir occasionally to keep everything from sticking.
  8. Once the chicken is cooked and tender, remove the lid and set aside for 10-15 minutes, or until the sauce thickens somewhat. Taste the sauce and adjust the seasoning with salt if necessary.
  9. Before serving, remove the bay leaves. Steamed rice is usually paired with adobo.
  10. Sip your Adobo with gusto!

Adobo is a versatile recipe; you may change the ingredients and cooking time to suit your tastes. Some variants include using different types of meat or adding sugar. Feel free to play around with it and make it your own!
