Ingredients:

1 1/4 cup finely sliced sweet yellow onions (Maya, Vidalia, etc.)
1 minced garlic clove
1/4 cup mayonnaise (preferably keto-friendly)
1/4 cup full-fat plain Greek yogurt or 1/4 cup sour cream
1/2 cup sharp cheddar cheese, grated
To taste, Tabasco sauce
1/8 teaspoon curry powder (optional, and can be left out for a lower carbohydrate count)
1/3 cup parmesan cheese, grated
1/8 teaspoon each smoked Spanish paprika, dried ancho chili powder, and sweet paprika
1 tablespoon green onion, chopped, for garnish
Directions:

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

Combine the finely chopped onions, minced garlic, mayonnaise, Greek yogurt (or sour cream), shredded sharp cheddar cheese, and Tabasco sauce (and curry spice, if using) in a mixing dish.

Spread the mixture into a small baking dish that has been lightly buttered.

Sprinkle with grated parmesan and paprika to taste. If you prefer a spicier kick, use ground ancho chile powder.

Bake for 25 to 30 minutes, or until bubbling and gently browned on top, in a preheated 350°F (175°C) oven.

Garnish with scallions (green onions).
