3 medium zucchini slices (shredded)
1 teaspoon sea salt
two huge eggs
1/4 cup feta crumbles (or grated parmesan)
1/4 cup shredded mozzarella (or other favorite cheese)
2 minced garlic cloves
2 scallions (finely sliced green onions)
1/4 cup finely chopped parsley or other herbs of choice
1.4 teaspoon of ground black pepper, chili powder, and garlic powder (to taste)
1 pound almond flour
1 tbsp. oil (for frying)
Instructions
Combine the shredded zucchini and salt in a large mixing basin; set aside for 10 minutes. Drain the water from the zucchini after ten minutes by squeezing it with your hand and discarding the water.
In a separate bowl, mix together the eggs, zucchini, crumbled feta, garlic, onions, and black pepper. Stir in the almond flour until completely incorporated.
Preheat a large pan over medium-high heat. 1 tablespoon oil should be added. Scoop batter into the pan with an ice cream scoop or big spoon and cook for 2-3 minutes per side, or until golden crispy and cooked through. Repeat on a paper towel-lined baking sheet.
To Cook: Preheat the oven to 400°F and line two large baking sheets with parchment paper, sprayed with cooking spray. Flatten the batter on a sheet pan. More frying spray should be sprayed on top. Cook for 20 minutes, flipping halfway.
Preheat the Air Fryer to 375°F. Place the fritters in a single layer on the preheated Air Fryer mesh. Brush with oil or spray with cooking spray. Cooking time is 8 minutes. Cook for another 4-5 minutes, or until the fritters are crispy and golden.
Garnish with lemon wedges and fresh chopped herbs to serve. Serve with ice cream, yogurt, tzatziki, or your favorite dip.
