These pizza chips are a simple two-ingredient dish. They’re tasty and entertaining, and you don’t have to be on a keto diet to enjoy them!

INGREDIENTS
2/3 cup (80 g) shredded low moisture mozzarella cheese
48 tiny pepperoni slices (21 g) INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit. Coat the inside of a tiny muffin tray with cooking spray. Because this recipe makes 16 chips, you just need to grease 16 cups.
Add 2 tsp mozzarella to each oiled muffin cup. Gently press the mozzarella into the cups. Place three tiny pepperoni slices on each chip. Sprinkle a little Italian seasoning on top of each chip if desired. This is optional, but it does add flavor.
Bake the chips for 8 minutes, or until the edges are a dark golden brown. Allow the chips in the muffin pan to cool until they are cold enough to touch. Remove the chips from the pan. To absorb up some of the extra oil from the cheese and pepperoni, I place the chips on a dish lined with a paper towel. Serve the pepperoni chips warm. They can be eaten on their own or with marinara sauce.

NOTES Mozzarella cheese can be substituted for different cheeses. More information can be found in the post. If you’re using mozzarella, make sure it’s shredded mozzarella with low moisture. I used low moisture half skim mozzarella cheese from Kirkland’s.
The texture of these chips will not be crunchy if they are made with mozzarella. More information can be found in the post’s “Pizza Chips Texture” section. To produce a crispy version, use shredded Parmesan cheese and preheat the oven to 400F. Cook until the chips are light brown (about 7-8 minutes). You may alternatively bake them on a baking sheet lined with parchment paper instead of in a little muffin tray. They can be baked in a muffin pan, but because the chips harden and become crunchy, they are also difficult to remove from the muffin tin.
You can substitute regular pepperoni for the small pepperoni; just use one per chip instead of three.
I paired them with Rao’s marinara sauce, which contains no sugar.
