It’s not a work of beauty, but it sure is good! I’ve only ever seen this done with chicken. I was curious to test what it would taste like with ground beef, which was on sale this week.

This dish is fantastic! It’s a great method to produce Mexican-style food that isn’t your typical taco or burrito. I honestly believed I developed this until I started downloading recipe apps and looking online and discovered a slew of variations on it lol oh well. I like it.

Ingredients:
1 bag Nacho Doritos, smashed.
2 cups shredded chicken 2 cups shredded cheese (or more!!)
1 tin Creamy Chicken Soup
1 ro’tel tomato can
1 cup sour cream
1/2C milk
1/2 cup taco seasoning (or more if desired)

Instructions:
Preheat the oven to 350°F. Coat a 2-quart casserole dish with nonstick cooking spray.
Except for the Doritos, combine all of the ingredients in a mixing bowl.
Layer half the Doritos (approximately 2 cups) on the bottom, followed by half the chicken mixture, the remaining Doritos, and the remaining chicken mixture. Top with additional cheese.
Bake for 35 minutes, covered with foil.

I normally double the recipe and bake it for 45 minutes in a 913 pan so we can have leftovers the next day.
