Casserole with Chicken Gloria

INGREDIENTS
3 boneless, skinless chicken breast halves, cut lengthwise
a third of a cup all-purpose flour
three tbsp olive oil
2 tbsp. melted butter
8 oz. sliced mushrooms
half a cup sherry wine
1 can cream of mushroom soup (18 oz)
6 swiss or muenster cheese slices
2 tablespoons chopped fresh parsley for garnish
To taste, kosher salt and freshly ground black pepper
PREPARATION
Preheat the oven to 350oF and prepare a 913-inch baking dish.
Season both sides of the chicken well with salt and pepper. Dredge the chicken in the flour, brushing off any excess.
Heat the oil in a large skillet over medium heat. Brown the chicken on all sides once the pan is hot. (You don’t have to cook it all the way through; the oven will finish it.) Place the chicken in a baking dish.
Increase the heat to medium-high and add the butter to the skillet. Season with salt and pepper to taste. Allow to bake until golden brown. Cook for another 1 to 2 minutes after adding the sherry. Cook until heated through, stirring constantly.
Top the chicken with the sauce and mozzarella pieces.
Bake for 30 minutes, covered with foil. Turn the oven to broil and remove the foil. Broil for 1 to 2 minutes, or until the cheese has browned.
Allow to settle for 5 minutes before serving. Serve garnished with parsley. Enjoy!
