Amish Friendship Bread is a cinnamon bread cooked with a starter (similar to sourdough starter) of flour, milk, sugar, and yeast. Before utilization, the starter is fermented, usually for 10 days.

This fast cinnamon bread is a quick bread that can be made at the last minute, with no rising time and no special ingredients!

This loaf is incredibly moist and keeps fresher than fast breads prepared with butter since it is made with vegetable oil instead of butter.

Unlike other baking recipes that begin with a prepared oven, this recipe begins with a cold oven to assist produce an evenly baked loaf with a lovely domed top. This allows the batter to slowly cook, preventing the crust from hardening before the inside of the loaf has had the time to bake thoroughly.

Spray nonstick spray into 6 small loaf pans (or 2 full size loaf pans), line with parchment paper, then spray again.
In a medium mixing bowl, combine the dry ingredients.
In a large mixing bowl, combine the eggs, milk, vegetable oil, and vanilla extract.
Stir in the flour mixture until no dry flour remains after adding it to the wet components.
Divide the batter evenly between the prepared baking pans. Sprinkle the cinnamon sugar mixture evenly over the top of the batter. Score the top of each loaf with a butter knife coated in melted butter.
Place the pans in a cold oven. Bake at 350°F for 30 minutes, or until a toothpick inserted into the center comes out clean (a few dry drumbs are OK).
