This Walking Taco Casserole is a tasty spin on the classic walking taco. It’s simple to prepare and ideal for a crowd-pleasing supper or party meal. It’s a tasty and filling dinner thanks to the layers of Fritos, seasoned meat, and melted cheese. Enjoy!

Ingredients:

1 pound ground beef
1 chopped onion
1 packet taco seasoning mix (1 oz.)
1 can (15 oz.) black beans, drained and washed 1 can (10 oz.) chopped tomatoes with green chilies, drained
1 can (15 oz.) drained corn 1 bag (9 oz.) Corn Fritos chips
2 cups cheddar cheese, shredded
Toppings: sour cream and chopped green onions
Time to prepare: 10 minutes Time to cook: 25 minutes Time allotted: 35 minutes

Instructions:

Preheat the oven to 375 degrees Fahrenheit.
Cook the ground beef and onion in a large pan over medium heat until the meat is browned and the onion is softened.
To the pan, add the taco seasoning mix and 1/2 cup of water. To blend, stir everything together.
To the skillet, add the diced tomatoes and green chilies, black beans, and corn. Cook for a few minutes, stirring constantly, until well heated.
Spread a layer of Fritos chips on the bottom of a big baking dish. Half of the beef mixture should go on top, followed by a layer of shredded cheddar cheese.
Repeat with the remaining Fritos, meat, and cheese.
Bake for 20 to 25 minutes, or until the cheese is melted and bubbling.
Serve hot, topped with sour cream and chopped green onions.
