You start by bringing butter and brown sugar to a boil until the sugar is fully dissolved. Then, you simply mix in heavy cream, powdered sugar, and a pinch of salt (the secret to a perfect salted caramel). Let the glaze cool for a few minutes before pouring it over your loaf. You can choose whether to remove the loaf from the pan before glazing it or not.

Salted Caramel Banana Bread Recipe

Banana Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¾ cup packed brown sugar
  • ½ cup butter (1 stick), room temperature
  • 2 eggs
  • ⅓ cup sour cream
  • 4 ripe bananas, mashed
  • 1 ½ teaspoons vanilla extract

Glaze

  • ¼ cup packed brown sugar
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • ⅓ cup powdered sugar
  • ½ teaspoon kosher salt

Preparation

  1. Preheat the oven to 350 degrees F and grease a 9×5-inch baking dish.
  2. In a medium-sized bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, beat together the brown sugar and butter until creamy. Add the eggs one at a time, mixing well after each addition.
  4. Add the sour cream, mashed bananas, and vanilla extract to the sugar mixture. Beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Transfer the batter to the prepared loaf pan and bake for 55-60 minutes, or until an inserted toothpick comes out clean. While the bread is cooling, prepare the glaze.
  7. In a small saucepan, combine the brown sugar and butter. Bring to a boil over medium heat, stirring until the sugar has fully dissolved, approximately 1 minute.
  8. Stir in the heavy cream and remove the pan from the heat. Add the powdered sugar and kosher salt. Mix until smooth.
  9. Allow the glaze to cool for 5 minutes before pouring it over the bread.
