  • 2 cups crushed Nilla wafers
  • 12 oz bag of Ghirardelli dark chocolate wafers

Instructions

  1. Preheat your oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Spread the coconut evenly on the baking sheet.
  4. Toast the coconut in the oven for 15 minutes, tossing every 5 minutes to prevent burning.
  5. In a large glass mixing bowl, heat the dulce de leche in the microwave for 1 minute.
  6. Scoop the toasted coconut into the bowl and mix well.
  7. Add the crushed Nilla wafers to the bowl and mix again.
  8. Pour the sweetened condensed milk into the bowl and mix until everything is well combined.
  9. Using a tablespoon, scoop out small ping pong-sized balls of the mixture onto a piece of parchment paper.
  10. Place the balls in the freezer for at least an hour to firm up.
  11. In a microwave-safe bowl, melt the Ghirardelli dark chocolate wafers in the microwave on 50% power for 2-3 minutes, stirring every 30 seconds until melted.
  12. Remove the coconut balls from the freezer and press them down slightly to flatten the bottom.
  13. Dip the bottom of each coconut ball into the melted chocolate and place them back on the parchment paper.
  14. Pour the remaining melted chocolate into a decorating bag and cut a small tip off the bag.
  15. Drizzle the chocolate over the coconut balls for a beautiful finishing touch.
  16. Let the chocolate set for about 15 minutes until hardened.
