Making a wonderful homemade gravy can seem difficult if you’ve never done it before. But we can assure you that consistently great gravy is firmly within your grasp. Once you’ve mastered the steps, you’ll never go back to that little envelope of dry mix again.

This method thickens with a roux (a flour and butter mixture), so begin by melting the butter in a skillet and then whisking in the flour once it has melted. Allow that to heat for a minute or two to allow the floury flavor to cook away before adding your liquid.
INGREDIENTS
4 cups turkey drippings or chicken/turkey stock
1 pound (1 stick) butter
1/2 cup regular flour
To taste, kosher salt and freshly ground pepper
PREPARATION
Pour any turkey drippings through a fine-mesh strainer to remove any debris. Allow the strained drippings to cool slightly before spooning off any fat that has risen to the surface. If the drippings do not equal 4 cups of liquid, add chicken/turkey stock until it does.
Melt the butter in a medium saucepan over medium-low heat. When the butter has melted, mix in the flour and simmer for 2 minutes, stirring constantly.
Pour in the turkey drippings or stock slowly, stirring constantly. Cook for another 10 minutes, or until the gravy thickens. Season with salt and pepper to taste. Serve immediately or keep warm until needed. Enjoy!
