I wanted something portable yet also a little deeper. This is a recipe I’ve been making for eons. It’s one of my favorite crust/fruit pairings. It’s ideal for a crowd, so they can stroll around with a slice of ‘apple’ in their hand if they wish. Serve with vanilla bean ice cream for a sophisticated dinner party.

CRUST 2 INGREDIENTS 1/2 cup flour 1 tablespoon sugar 1 teaspoon salt
1 cup of shortening
2 separated eggs
1/2 c. milk
FILLING
2 cups cornflakes cereal
10 peeled and sliced apples
1 1/2 cups sugar 1 teaspoon cinnamon
GLAZE
1 cup powdered sugar 3 teaspoons water

INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit.
In a large mixing basin, combine the flour, 1 tablespoon sugar, and salt. Using a pastry knife, cut the shortening into the flour.
Fill a 2/3 cup measuring cup halfway with egg yolks. Fill the remaining space in the cup with milk. Mix the egg yolk and milk into the dry ingredients.
Divide the dough in half and roll each half out into a rectangle large enough to cover a 1015 rimmed cookie sheet.
One rectangle of dough should be placed on the cookie sheet. Corn flakes should be sprinkled over the crust.
Separately, combine the sliced apples, 1 1/2 cups sugar, and cinnamon in a separate basin. Coat the apples thoroughly before placing them on top of the corn flake layer.
Place the second rectangle of dough over the apples and squeeze the sides together.
Beat the egg whites in a small basin until frothy, then spread over the top crust.
Bake for 1 hour at 350°F.
Whisk together the glaze ingredients in a small dish. Remove the baked bars from the oven and drizzle the hot crust with frosting.
Before serving, allow it cool to room temperature.
