Ingredients:
RIBS
2 kilograms (4 pounds) baby back ribs of pork
2 tsp garlic powder
1 tsp. onion powder
2 paprika teaspoons
1 teaspoon cracked black pepper 2 tablespoons salt
a half teaspoon cumin
1 tsp chili or cayenne pepper powder (optional)
2 tbsp of olive oil
SAUCE:

2 cups (500ml) BBQ sauce
3 teaspoons garlic mince
2 tbsp of olive oil
1 tsp. Worcestershire sauce
1 tsp cayenne pepper (optional for more heat)
1 teaspoon sea salt

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Remove the stiff membrane covering the underside/bony side of the ribs. Place on a baking sheet or pan that has been lined with foil (or parchment paper).
Combine garlic powder, onion powder, paprika, salt, pepper, cumin, and chili powder or Cayenne pepper. Drizzle oil over the ribs and sprinkle with spice. Rub the seasoning all on both sides of the ribs. Bake for 2 hours, covered with foil.
Combine sauce ingredients during the last 5 minutes of cooking time.
Remove the ribs from the oven, remove the foil, and distribute the barbecue sauce mixture over the tops of the ribs.
Raise the temperature of the oven to 460°F (240°C). Return the ribs to the oven, uncovered, for another 10 minutes. Change the oven settings to broil (or grill) on medium-high heat for 3 minutes to lightly sear and caramelize the edges.
Rest for 10 minutes before slicing to allow the fluids to recirculate back into the meat.
