Ingredients:

1 cup all-purpose unbleached flour

1 teaspoon baking powder

1 tablespoon salt

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon black pepper, ground

1 cup of cold water

Instructions:

Combine the following dry ingredients:

Combine the all-purpose flour, baking soda, salt, pepper, garlic powder, onion powder, and black pepper in a large mixing bowl. Mix vigorously to distribute the spices evenly.

Add Water: Gradually whisk in the cold water to the dry ingredients. Continue whisking until the batter is smooth and free of lumps.
Allow the batter to rest for 10-15 minutes. This allows the ingredients to properly hydrate and the flavors to combine.

Coat your seafood (such as fish fillets, shrimp, or other seafood) in the batter, coating thoroughly.

Fry: Heat the oil in a deep fryer or deep skillet to around 350°F (175°C).

Carefully drop the battered seafood into the hot oil and fry until golden brown and crispy. This normally takes a few minutes, depending on the thickness of the seafood.

Drain and serve: Remove the fish from the oil with a slotted spoon and place it on a dish lined with paper towels to drain any excess oil.
