1 teaspoon garlic powder
2 teaspoon baking powder
2 eggs

Instructions
Preheat the oven to 400 degrees Fahrenheit. Line an 8-inch baking dish with parchment paper. Place aside.
Microwave the mozzarella cheese and cream cheese for 1 minute in a microwave-safe bowl. Stir and microwave in 30 second intervals until both are completely melted. To make a melted cheesy combination, combine all of the ingredients.
In the melted cheese mixture, combine the almond flour, oat fiber, salt, pepper, garlic powder, most of the sliced jalapeño, and baking powder. Mix thoroughly to mix the cheese and the dry ingredients.
Mix in the two beaten eggs, then the dry ingredients. For a more consistent dough, make sure all of the ingredients are thoroughly combined. The dough will be extremely sticky.
Using oiled or damp hands, press the dough into an 8-inch baking pan lined with parchment paper. With your hands, evenly distribute it throughout.
Interspersely press the remaining sliced jalapenos all over the top of the dough. Top with cheddar cheese.
Bake for 30 minutes, or until the dough has firmed and the cheese has slightly browned on top. My oven is set to 30 minutes. Allow the Jalapeno Cheese bread to cool slightly before slicing it into 12 pieces.
Serve as a salad side dish with lunch or dinner. This Jalapeno Cheese Bread is also great for sandwiches.
