Breakfast Casserole with Tater Tots

8 eggs
1 pound Jimmy Dean pork sausage
1 1/2 cups heavy cream or whole milk
1 package frozen tater tots (about 24 oz)
2 cups shredded cheddar cheese
1 1/2 teaspoon salt
1 teaspoon black pepper
14 teaspoon garlic powder

Feeds a crowd – With a larger dish and a few adjustments, this recipe may easily be scaled up to feed a crowd!
Variations – You may truly personalize this one! Substitute various cooked meats, add fresh red and green peppers, or top with bacon for crunch.
Make Ahead – You can pre-assemble this tater tot casserole by assembling it, covering it with foil, and putting it in the oven the next morning.

Preheat the oven to 375°F and spray a 9 x 13-inch baking sheet with nonstick cooking spray.

Brown the meat – I use breakfast sausage, but you can use any beef you choose – in a skillet over medium heat, breaking it up into little pieces. Drain any extra fat and set aside the cooked meat.
