  • 1 teaspoon Cajun seasoning (or Creole seasoning)
  • ½ teaspoon dried Oregano
  • 2 tablespoons Olive oil
  • 6 oz andouille sausage or smoked sausage (thinly sliced)
  • 10 ounces fettuccine pasta
  • ½ yellow onion (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 4 teaspoons Cajun seasoning (or Creole seasoning)
  • 1 teaspoon brown sugar
  • 2-3 cloves garlic (chopped)
  • ½ cup crushed tomatoes
  • 1 cup chicken broth (sodium-free)
  • 1 cup heavy cream
  • ⅔ cup grated Parmesan
  • 1 tablespoon parsley (chopped)

How To Make Cajun Shrimp Pasta with Sausage

  1. To start, toss the shrimp with salt, pepper, Cajun seasoning, and oregano, ensuring they are coated well.
  2. Heat a large skillet over medium-high heat and drizzle the bottom of the pan with olive oil. Add the shrimp and cook for 2 minutes. Flip the shrimp over and cook for another minute or two. Then, remove them to a plate and set aside.
  3. Drizzle a little more olive oil into the pan, and add the sliced sausage. Cook until nicely caramelized, about 4-5 minutes. Remove the sausage from the pan and set aside.
  4. Cook the fettuccine pasta in salted, boiling water until al dente.
  5. Lower the heat to medium and add a bit more olive oil to the pan. Add the onion, red bell pepper, Cajun seasoning, brown sugar, and a pinch of salt. Sauté until the onion and pepper have softened, while also scraping up any browned bits, if any. Add the chopped garlic and cook until fragrant, about 30 seconds.
  6. Pour in the crushed tomatoes, chicken broth, and heavy cream. Bring the mixture to a simmer, stirring and scraping up any brown bits from the bottom of the pan. Allow it to simmer for a couple of minutes.
  7. Once the sauce is simmering, add the grated Parmesan and stir until it’s well blended. Then, add the cooked pasta and sausage to the pan, stirring to combine and heat through for 2-3 minutes. Season with salt and pepper to taste and finally, add the shrimp.
  8. Serve the Cajun shrimp pasta with a sprinkle of chopped parsley on top.

Prepare to be blown away by the rich flavors and textures of this Cajun shrimp and sausage pasta. It’s a dish that combines the best of seafood and sausage, all wrapped up in a creamy and spicy sauce. Enjoy!
