CAKE

  • 2 cups all-purpose flour
  • 2 cups packed brown sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt

  • ½ cup (1 stick) butter, melted and slightly cooled

  • 3 cups shredded Granny Smith apples (peeled)

FROSTING

  • 1 cup (2 sticks) butter, at room temperature
  • 5 cups powdered sugar
  • ⅓ cup jarred caramel
  • ½ teaspoon ground cinnamon
  • 2 tablespoons heavy whipping cream
  • 1 pinch salt

  • 12 slices apple
  • ¼ cup jarred caramel

Instructions

CHEESECAKE

  1. Preheat the oven to 325 degrees F. Spray a 9-inch springform pan with nonstick spray.
  2. In a large bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add sugar and salt, and blend for 2 minutes, scraping down the sides of the bowl as needed. Add eggs, one at a time, blending well after each addition. Finally, mix in the sour cream, whipping cream, and vanilla. Mix until smooth.
  3. Pour the batter into the prepared pan and bake for about 40 to 45 minutes, until the cheesecake is set and no longer jiggly. Remove from the oven and let it cool on a wire rack for at least an hour. Once cooled, place the pan in the freezer and let the cheesecake freeze completely, either for several hours or overnight.

CAKE

  1. Preheat the oven to 350 degrees F. Spray two 9-inch round cake pans with nonstick spray, line them with parchment paper, and spray again.
  2. In a medium bowl, whisk together the flour, brown sugar, baking soda, cinnamon, baking powder, and salt.
  3. In a large bowl, beat the eggs, melted butter, and vanilla. Add the dry ingredients to the bowl and mix until well combined. Stir in the shredded apples.
  4. Divide the batter between the two pans and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out fairly clean. Let the cakes cool for at least 20 minutes, then turn them out onto racks to cool completely. Peel off the parchment paper and discard.

FROSTING

  1. In a large bowl, use an electric mixer to cream the butter. Gradually add the powdered sugar, caramel, cinnamon, cream, and salt. Mix until well combined and creamy.

ASSEMBLY

  1. Place one cake layer in the center of a cake plate or platter. Spread a small amount of frosting on top to act as “glue” for the layers.
  2. Remove the frozen cheesecake from the freezer, remove the sides of the pan, and slide a knife under the cheesecake to remove it from the pan. Measure the cheesecake layer against the cake layers. If the cheesecake is slightly larger, trim it to match the size of the cake layers. Place the cheesecake layer on top of the first cake layer and cover it with a small amount of frosting. Add the second cake layer on top.
  3. Frost the entire cake by starting with a large scoop of frosting on top and spreading it evenly across the top and down the sides. Continue spreading until the cake is fully covered. Decorate as desired.
  4. Keep the cake refrigerated. Before serving, top each slice with a slice of apple and a drizzle of caramel.

Notes

  • While this cake may seem like a daunting task, you can break it down into two days. Bake the cake one day, let the layers cool completely, wrap them in plastic wrap, and then assemble and frost the next day. This will ensure the cake stays moist and delicious.
