I absolutely adore sweet potato casserole! Here’s what I did for a larger dish, and it was delicious. First, I roasted and chilled fresh sweet potatoes. I increased the mashed potatoes and sugar while keeping the butter and vanilla the same, used 1 large egg, and removed the milk entirely to make a firmer dish.

I absolutely adore sweet potato casserole! Here’s what I did for a larger dish, and it was delicious. First, I roasted and chilled fresh sweet potatoes. I increased the mashed potatoes and sugar while keeping the butter and vanilla the same, used 1 large egg, and removed the milk entirely to make a firmer dish. I baked it for about 30-35 minutes before adding the Topping, then another 15 minutes or so after that. It’s preferable to let it rest for 20-30 minutes before serving, in my opinion. Another thing to keep in mind is that any leftover Topping freezes well for the next occasion.

This was a huge hit at our Thanksgiving dinner tonight!! The kids loved it, and even my husband (who isn’t a big fan of sweets) asked me to make it again for Christmas dinner! Although it tasted nearly like a dessert, it went great with the turkey. I cut the recipe in half, used heavy cream instead of milk, and made it the night before. Then I chilled it for about 20 minutes before placing it in the oven. It was great after around 30 minutes of cooking! Thank you, Kaykwilts, for a fantastic new favorite!
