1 pound fresh green beans, trimmed 1.5 pounds quartered red potatoes
4 garlic cloves, minced 2 lemons, one juiced and one sliced
2 tbsp of olive oil
1 tsp. dried oregano
Season with salt and pepper to taste.

Instructions:

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
Prepare the chicken as follows: Salt, pepper, and dried oregano season the chicken breasts. Place aside.
Make the Vegetables: Combine the trimmed green beans, quartered red potatoes, minced garlic, and olive oil in a large mixing basin. Toss the vegetables in the oil and garlic to coat.
In a baking dish, assemble: In a large ovenproof baking dish, arrange the chicken breasts in a single layer. Arrange the vegetables with the seasonings around the chicken.

Cover the baking dish with aluminum foil and bake for 20 minutes in a preheated oven.
Remove the foil and bake for another 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the vegetables are soft.
Garnish and serve: When finished, sprinkle with chopped fresh parsley for a pop of color and taste. Serve immediately.
