No-Bake Cookie Cake transforms the famous no-bake cookie into a cake!

Last month was my son’s birthday. When I asked him what he wanted for his birthday dessert, he stated he wanted a no-bake cookie cake.

I wasn’t sure what he meant, so I asked him some questions.

He stated he wanted me to adapt my no-bake cookie recipe into a cake.

With my no-bake cookie bar recipe, I transformed no-bake cookies into a bar but wasn’t sure how it would work as a cake. I’d never seen it turned into a cake recipe before, but I was willing to give it a shot.

Because my daughter is allergic to peanuts, I used my Peanut Butter Free No-Bake Cookie Recipe instead of the traditional no-bake cookie recipe.

INGREDIENTS
2 c. sugar
1 pound butter
12 cup of milk
4 teaspoons cocoa
a tsp vanilla extract
3 cups quick oats (gluten-free quick oats are recommended)
a third of a cup of chocolate chips
INSTRUCTIONS
Bring the first four ingredients to a boil in a saucepan.
1 minute in the microwave.
Stir in the vanilla, oats, and chocolate chips until incorporated and the chocolate chips have melted.
Pour the batter into a circular cake pan. A 9- or 10-inch pan works well. (If serving on a cake platter or plate, line the pan with parchment paper to ease removal from the pan simpler.)
Refrigerate until completely hard.
Serve cut into pieces.
These will keep in the fridge for a few days.
