Ingredients:

12 cup granulated sugar

1 pound softened butter

three huge eggs

12 tsp of lemon extract

2 cups regular flour

3 tbsp. baking powder

18 teaspoon of salt

3 cups granulated sugar

14 cup of water

1 tsp. lemon extract

Instructions:

Preheat the oven to 350 degrees Fahrenheit. In a large mixing basin, combine the flour, baking powder, and salt. Place aside. Sugar and butter should be combined. Beat in the eggs and lemon extract.

Mix in the flour mixture until it is smooth. (The dough will be a little sticky) If the dough appears light in color, add a drop or two of yellow food coloring. Chill the dough until it is firm.

Drop dough onto a lightly greased cookie sheet, about 2-inches apart, with a small cookie scoop. Bake for 12-15 minutes, or until firm and golden brown.

Allow cookies to cool completely on the cookie sheet. In a mixing bowl, whisk together the Icing ingredients until smooth. It should be thicker than thin, but still runny.

Dip the tops of the cooled cookies into the glaze, then place them on a wire rack to allow the glaze to flow down the sides.

While the glaze is still wet, top with sprinkles or lemon zest. Keep it in an airtight container. If you wish to freeze the cookies, freeze them unfrosted and then frost them once they’ve thawed.
