Ingredients

  • 1 (15.25 oz) can corn, drained
  • 1 (14.75 oz) can cream-style corn
  • 1 (8 oz) package Jiffy corn muffin mix
  • 1 cup sour cream (can use light)
  • 6 tablespoons salted butter, melted
  • 1 to 1 1/2 cups shredded sharp cheddar cheese

Preparation

  1. Preheat oven to 350°F.
  2. Grease a 2-quart casserole dish.
  3. In a large bowl, combine the drained corn, cream-style corn, Jiffy corn muffin mix, sour cream, melted butter, and cheddar cheese. Mix well.
  4. Pour the mixture into the greased casserole dish.
  5. Bake, uncovered, for 1 hour and 10 minutes, or until set in the middle and a toothpick inserted in the center comes out clean.
  6. Allow the casserole to cool for 5 minutes before serving.
