Locals and visitors alike agree that these Maryland crab cakes are delicious. The flavors of lemon, parsley, and Old Bay Seasoning blend in this classic lump crab cake dish, but the crab meat itself provides the most flavor. Use lump crab flesh, little filling, and bake the cakes in a very hot oven for the greatest texture.

Ingredients for Original Old Bay Crab Cakes: 2 slices dried bread, crusts removed
1 cup milk
1 teaspoon of mayonnaise
1 tsp. Worcestershire sauce
1 tbsp. parsley flakes
1 tbsp. baking powder
1 tsp Old Bay Seasoning
1 egg, beaten 1/4 teaspoon salt
1 pound lump crabmeat 1 pound vegetable oil

Break the bread into tiny pieces in a large mixing dish. Milk should be used to moisten.
Mix in the mayonnaise, Worcestershire sauce, parsley, baking powder, Old Bay seasoning, salt, egg, and crabmeat. Form into 4 patties after lightly mixing. Refrigerate the patties for 30 minutes to help them stay shaped during cooking. Fill your frying pan with about a quarter-inch of vegetable oil. Fry until golden brown on both sides over medium-high heat. To avoid over-frying, I usually turn every 1 minute.
